Been a while

 It's definitely been a while since I last posted and I've learned a ton about being gluten free since November 2021. I'll try to give a breakdown of the big things I've learned and well, keep up to date a bit more on actually posting. Something to keep in mind though is I'm 100% lucky that I was NOT diagnosed with celiac. This means if I get a little bit of gluten, chances are I won't be sick for days following. Though this isn't to say that I haven't felt sick right after and had some negative repercussions because of eating gluten. The first noticeable time was Christmas 2021 when I went to mass and received communion not thinking and had a stomachache the trip home and for a bit after. The second would have been summer 2023 when I decided it was worth the risk to eat a hamburg with regular breadcrumbs inside because I was actually hungry for once, spoiler alert, it wasn't worth the follow pain, but I hadn't had a big dose all at once previous...

Where To Begin? Flour?

Yesterday, I decided the first real step needed to take to work on adulting while being gluten-free is to understand what is/contains gluten and all the different types of flour. This last month I have looked at recipes online, in cookbooks and received from friends. The biggest issue is how many different flours are used. Yes a recipe might only call for one flour, but which kind. Or some recipes call for a blend that the creator has developed themselves. Which brands of flour taste good, are some certified gluten-free or made where cross-contamination could be an issue. It is extremely overwhelming.  What I am looking to do, and if successful will post is a chart of the different gluten-free flours and the information I can find on them. Since I think sourcing is important there will be a list at the bottom. Sadly some sources will be easier to verify/trust than others but one needs to start somewhere!  If there are any suggestions, I'd greatly appreciate where to start look...

Life Changing News

 December 28, 2021 Well here goes nothing, people seem to believe that documenting one’s journey is a vital part of one’s experience. Especially in being able to look back and see how far one has grown. Guess I will start with the basics. I’m 32 love (specific) food, and over the last few years have built a 4-inch binder full of medical tests to try and determine why I’ve been feeling horrible 98.5% of the time. Back in November, as families were planning their Thanksgiving travels and meals, mom made the 5-hour trek to McLean, VA to attend yet another medical appointment with me. This time it was for rheumatology with Dr. Sepehr Mesdaghinia at NOVA Arthritis: Rheumatologist, one of the few MDs I see that I like and trust. That day, on Wednesday, November 10 th , 2021, I felt like my world was falling apart and honestly at times it still feels that way.
